Wild Mushroom Tamales

Yes indeed. I love tamales. I love mushrooms. So the blending of the two was something I should have come up with on my own, but instead I found a recipe in my tamale cookbook. Tamales are kind of a lot of work, but boy were they worth it! I also made a spicy chipotle sauce which was perfect. This was one of those recipes that looks so good in the picture in the cookbook, but you think “that probably won’t look that good when I make it…” but they did look (and taste) that good!

Good hard ride today, battled the wind for a LONG time.
