Ginger-mint chicken

Ok, it sounds weird- but it passed the Dusty test.  And according to Dusty, leftovers are also delicious in sandwich form.  I really like yogurt marinades- they keep the meat super moist and tender- but you have to be careful not to marinate too long or the meat can get almost mushy.

Ginger-mint chicken

  • 2-4 boneless skinless chicken breasts
  • 2 cups yogurt
  • 1.5 tbsp fresh grated (or finely minced) ginger
  • 2 cloves garlic, minced or pressed
  • zest of one lemon
  • handful of mint leaves, chopped
  1. whisk everything together, then add salt and pepper to taste
  2. add chicken, coat with marinade and let sit 20 minutes-1 hour -grill or bake
